I heard that you should only use the choke in the morning when you first start the bike. Is this true? How long are you supposed to run it on choke for?

It seems like you might want to use it anytime it's been sitting for a few hours.

Use the choke until the motor is reasonably warmed up. You're right, you should use it any time the motor has cooled all the way off.

If you park the bike at a market and are in for 20 minutes, no need, but if you ride to work and leave it sit for 9 hours, warm it up all over again.:thumb:

Just as a note, the z750 is fuel injected, so it doesnt have a choke. The "choke" lever simply ups your idle speed by openeing the throttle bodies just a tad. As such you arent very likly to foul your plugs by riding off with it, as you would with a real carburated choke.
