Really? I thought iTunes just shoved it into some proprietary format. Clearly I've been outta the big-vendor loop for too long.

For converting, I'm a fan of dBpowerAMP Music Converter and my library's making its way to Monkey's Audio. That quality allows for dumbing down to MP3 as needed.

I can't seem to remember the app I use for burning to CD.....

+1 seriously, this is very easy to use, free to download for win/mac, and it works well. I am not a mac person, but I do like this software.

Yup you just pop in a cd and it converts it to mp3, it would have to to be able to play on the ipod. IT IS by far the easiest mp3 converter out there.
I even put cd's into itunes that were unplayable on a cd player and BAM, converted into an mp3 skip free.

itunes also rips to cd, but for this i often use Nero for the simple fact that it can text encode the disc.
