The SV650 is a great all-around bike especially in the twisties and handles very well. I've had an '00 for almost 2 years (14000 miles) and lately have been thinking about a VFR although I don't know why. The V-twin has a broad torque curve compared to in-line 4's meaning that it has reasonable power from about 3000 rpms up to about 9000 rpms. You don't have to pay as close attention to keeping the rev's up like you do on an R6 or GSXR. However, in flat-out acceleration, an R6 or GSXR will eventually leave an SV behind. If you weigh more than about 165 lbs, you will probably eventually upgrade the front suspension. Also, the stock Metzler M4 tires aren't the best.
