Cats

I know I'm gonna get flamed for this but I live in Antarctica where no one cares about emissions.
Would removing cats improve HP?

DO WHAT!!!! I didn't know you could ride motorcycles in Antartica. Aren't you cold?

This is my island in the sun... oy! oy!
But seriously I ride in Antarctica because cold air is
"denser air" which equates to more HP and mpgs.

If I remove the cat(s) but still have a muffler... will
it eventually burn out my exhaust valves?

you have a california model bike (known for strict emmision/smog restrictions), thus requiring catalytic convertors to help with lowering smog/emmision pollution in. the other 47 US states dont have strict smog/emmision guidlines, so they dont have cats. my bike is the same as a cali bike, but mine doesnt have cats. id say your good to go on removing them.

just trying to explain this easily.
